The Palm Restaurant Pasta Fagioli Soup Recipe

Ingredients
  • 1/4 cup Olive Oil
  • 1 medium Onion, diced
  • 8 cloves Garlic, finely chopped
  • 2 cups diced canned Italian Plum Tomatoes with juice
  • 8 cups Chicken Stock
  • Fine Sea Salt and freshly ground Black Pepper, to taste
  • 3 cups canned Canellini Beans, well drained
  • 1/2 pound small Pasta
  • 1 1/2 tablespoons finely chopped flat leaf Parsley, for serving
  • 1/4cup freshly grated Parmigiano Reggiano Cheese, for serving
  • Extra Virgin Olive Oil, for serving
Instructions
  1. Add 1/4 cup olive oil to a large, heavy pot.
  2. Place pot over medium heat.
  3. When oil is hot and shimmering, add onion. Sauté until softened, about 10 minutes.
  4. Add garlic. Cook for 1 minute.
  5. Add tomatoes, crushing the tomatoes gently with you hands. Cook for 6 to 7 minutes, stirring frequently.
  6. Add chicken stock. Increase heat to high.
  7. When the liquid comes to a boil, add 1 1/2 teaspoons salt and 1/2 teaspoon pepper.
  8. Partially cover pot and adjust heat to maintain a medium simmer. Simmer for about 1 to 1 1/2 hours, stirring occasionally.
  9. Taste. Add more salt and pepper, to taste, if needed.
  10. Add beans. Reduce heat to a bare simmer.
  11. Prepare pasta according to package directions.
  12. Drain thoroughly, then spoon some pasta into soup bowls.
  13. Ladle soup over the pasta.
  14. Scatter a small bit of parsley and grated cheese on top.
  15. Drizzle each bowl with a teaspoon of extra virgin olive oil.
  16. Serve hot.
